Bistronomy knows no frontiers, and can stand apart from French tradition. A superb invitation to take a gourmet journey at Canaima, a successful fusion between France and Latin America, and Venezuela in particular. The decor is sober and warm, with nods to the Amazon rainforest, and chef Andrés Sandoval, a graduate of the Institut Bocuse, and Veronica Suñé are at the helm. A warm welcome as they serve up colorful plates that combine French cuisine and seasonal produce with reinterpreted South American recipes. Original cocktails and a selection of French and Latin American wines accompany the dishes, some of which are vegetarian.
