In a newly redesigned Sapnà, chef Rémy Havetz takes us into uncharted territory. The sobriety of this room, unseen anywhere else, is matched by an original cuisine based around famous dim sum dishes that are full of gustatory revelations: Wonton fish or beef, Shumai lamb tajine... Accompaniments in the same spirit of incredible flavors. Sexy gyoza and a combination of cauliflower, coconut, curry and kimchi to finish. Sweet, fragrant, the most gourmet of daydreams keeps us on our toes.
