Chef Rémy Havetz, who moved to the kitchens of Brume further south on the Presqu'île, has turned Sapnà into an evening dim sum bar. Sapnà, which means "dream" in Hindi, makes your best gourmet wishes come true. In a Sapnà of otherworldly beauty, we head off into uncharted territory, towards Southeast Asia and the streets of Hong Kong. The sobriety of this original dining room is matched by a unique cuisine based around famous dim sum dishes that offer a host of gustatory revelations: skate wing wonton, pig shumai... Sexy gyoza and a surprising combination of pear/coffee/panais to finish. Sweet, fragrant, the most gourmet of daydreams keeps us on our toes.
