When it comes to desserts, pavlova is the gateway to heaven. What is a pavlova? It's a dessert of incredible lightness, just like the Russian ballerina Anna Pavlova for whom the recipe was created. It's made from a base of meringue, both crunchy and soft, topped with whipped cream and fresh fruit. So when master pastry chef Joël Maier offers us the "king dessert" on a seasonal menu of individual or shared pavlovas, each more sublime than the last, it's an absolute delight.
