Le Danton... by chef Benjamin Besse inspires nothing but softness. The relaxed elegance of the dining room, where you can watch the chef cooking behind the glass. Softness of the welcome and wine service by Pierre-Antoine, who has selected some fine bottles. Softness of the plates superbly prepared by a chef adept at using fresh seasonal produce and low-temperature cooking. The result is tasty meats that melt in the mouth, like this Aubrac shank cooked for 50 hours. On a short menu, it's a succession of delights. Always a favorite.
