Restaurant in a warm and friendly bistro atmosphere in Lyon.

The substrate is the fertile soil that enabled chef Hubert Vergoin to develop his idea of a modern bistro well before the wave of bistronomy... A pioneer who never ceases to amaze us with each visit to the heights of the Croix-Rousse. The friendly atmosphere is ideal for savouring tasteful cuisine presented on a short menu that is constantly evolving according to seasonal local produce and the chef's inspirations. In the evening, we attack the daring "larder" with, this autumn, a hot venison and veal pâté. Good cheeses and good food. Great value for money to discover Lyon's bistronomy.

Une cuisine originale et pleine de saveur. Une très belle carte des vins avec de nombreuses offres en bio et naturel. Une adresse incontournable.

En botanique, le substrat fait référence à un support de culture qui sert au développement d'une plante. A la Croix Rousse, c'est un restaurant moderne à la déco épurée avec une cuisine-laboratoire vitrée, au-dessus de laquelle le chef fait pousser des champignons prêts à être cuisinés. Dans ce décor original, l'accueil chaleureux et les bonnes effluves annoncent un bon repas. Après une très bonne mise en bouche (tartare de canard aux herbes), la suite est très bonne, même si on s'attend à un peu plus d'audace : bœuf séché dans son bouillon, poisson cuit juste comme il faut, accompagné de ses légumes croquants et de sa délicieuse sauce, glace au brownie et pommes façon tatin aux cacahuètes caramélisées.
