Chef Dolfi's Mink:
Chef Alessandro Dolfi (Alex to his friends) is the chef and owner of Trattoria la Pasta.
His experience with Italian cuisine began when he was a child in his grandmother Anna's house. On Sundays, in the kitchen of the "nonna", they prepared appetizers, handmade pasta, pizzas and much more, and every weekend little Alessandro learned the authentic Italian culinary traditions. His passion for cooking was so strong that he decided to open his first restaurant at the age of 23 in his hometown of Pisa, but his passion for traveling was also strong and he decided to combine the two: cooking and traveling.
He learned the secrets of international cuisine by traveling to India, Africa, Argentina and all over Europe, also opening restaurants in Spain. At the age of 30, he decided to settle down with his current wife Romina and their little daughter Anna in the white city: Mérida. "With Trattoría la Pasta, I have reached the true essence of my grandmother Anna's authentic cuisine. I am very happy that our concept appeals to the Yucatecs and also to all our international customers." With these words, "Chef Alex" expresses his true love for Mexico without abandoning his Italian traditions that are reflected in every dish at Trattoria La Pasta
