Sansho alone sums up the Prague culinary revolution. The English chef Paul Day (former second at Nobu London) opened this unusual restaurant a few miles from the city centre and decorated it as a neat rural cottage. Here, the influence is as much Asian as South American and the products, all from Czech organic agriculture. The result is a tasting menu that is as surprising as it is delicious. A crab sandwhich in molt, a pork breast confit with watermelon, pig tacos of a finesse rarely observed..
