FERME DU LAVOIR
At the heart of the Bessin, three kilometres from Omaha-Beach, the Lavoir Farm is a gourmet stop on the circuit of the landing beaches. Miryam and Guillaume Capelle took over this exploitation of thirteen hectares of orchards, four years ago, in 2010, turning to a decidedly biological agriculture. All the products come from the apples of the orchards carried out with respect for the surrounding fauna and flora, combining traditional methods and modern techniques with the same concern to release all the aromas of the apple. The range thus developed consists of a half-dry cider (assembly of eight sweet varieties, bitter sweet and glazed), typical of the region of Bessin, marked by freshness and extraordinary fruity notes and a raw cider (assembly of sweet, bitter and bitter varieties) marked by a more pronounced bitterness. Thanks to an air-conditioned cellar, natural foam catches are particularly well controlled. A know-how every year in the competition of the Saint-Jean des Ciders organised by the Maison Cidricole in Normandy, where the Lavoir farm won several silver medals in 2011, 2012 and 2013, especially for its half-dry cider to the delicate and very fine effervescence.
