Destined to be a perfumer, he tunes his dishes to the nose. His inspiration comes directly from nature. Each dish is accompanied by a story, and nothing is left to chance. The sommelier will recommend carefully sourced natural wines. The flavors are pronounced and the combinations are original, so you should remember them for a long time!

My personal favourites were the Flaxseed cracker with North sea shrimp paired with #tsolikouri 2021
Salted beets surrounded with ferments and horse radish paired with somewhat aged #khivikvi 2019
Another top pairing of the evening was definitively the Wild hare chocolate dry aged, with red cabbage, plums and smoked foie gras with #saparavi 2021
To finish off with Bruno's Kiss my chestnuts paired with a #chinuri #petnat @iagos_winery
