Traditional and inventive recipes to taste in the dining room or in one of the rooms in Diefmatten.
For three generations, the Schlienger family has been opening its doors to the Cheval Blanc, a veritable jewel of Alsatian gastronomy. Nestled in the heart of the peaceful Sundgau region, this emblematic inn perpetuates the region's culinary traditions with passion and talent. Chef Patrick draws his inspiration from the treasures of the Alsatian terroir, from gourmet memories to shimmering colors and intoxicating scents. His recipes are both traditional and innovative, with a subtle blend of flavors. From pike quenelle au gratin with crayfish to white fish cassolette with matelote sauce, each dish reveals the gourmet soul of Alsace. The Auberge du Cheval Blanc welcomes you to a charming setting where the warmth of the décor harmonizes with the art of the table. In the middle of an English-style park, between green hills and flowering farms, let yourself be transported by the tranquility of the Sundgau region. Every moment spent here is an immersion in the generous nature that surrounds the establishment. While the focus is on Alsatian cuisine, Chef Patrick also knows how to surprise the palate with dishes from elsewhere. Scallops a la plancha or pot-au-feu with three fishes and gambas are just a few of the tasty experiences that testify to his talent as a culinary explorer. Because passion is something to be shared, Cheval Blanc organizes monthly cooking classes. A unique opportunity to discover the secrets of Alsatian cuisine and leave with new culinary skills. Every Saturday, celebrate Alsatian tradition with a delicious pot-au-feu. Accompanied by a comforting soup, fresh crudités and local vegetables, this feast will delight lovers of authentic flavors. To extend the experience, the Cheval Blanc offers you the chance to spend a cosy night in one of its rooms. A haven of peace where well-being and tranquillity are the order of the day.
