LA CRAVENCO
He owes his name to his location. In the heart of the Crau, ancient alluvial plain of the Durance, the mill la Cravenco, literally "daughter of the Crau" in Provençal, has an exceptional land. It is close to 600 local olive growers who bring their olives every season. Close to 800 tons. Of these, 600 tonnes are intended for the development of olive oil: from the PDO Valley of Baux-de-Provence, AOC Provence, an oil of France with green fruit, as well as oils flavoured with lemon, orange or clementine. And, more original: oils flavoured with fennel, truffles of Dordogne and more original, coffee or hay of Crau AOC. Finally, the PDO Oil Vallée des Baux-de-Provence Bio, which distinguishes itself by the contribution of picholine which gives it a more pronounced ardence. The other flagship production of the Cravenco, and its first vocation, is confectionery. The table olives fall into seven varieties: cailletier, picholine, lucca, bouteillan, la and the famous olives broken (salonenque) and black olives (grossane) PDO Vallée des Baux-de-Provence. The désamérisation technique of olives has been fully controlled since 1963: it takes some 9 months of preparation! Olives, like oils, have already seduced Japan, the Czech Republic, Germany, Switzerland or Austria. As well as many people in the sector who do not hesitate to cross the door of this local institution.
