Thomas Companion, head of Escutcheon, and his wife Virginie are at the head of a true gastronomic stage beaunoise. Gastronomic, because the dishes are studied in both flavours and aesthetics, but also because the products used are fresh and seasonal. Between land and creativity, Thomas Companion always finds a balance. You can see it by browsing the map. Some of the rare dishes are on the menu, such as the toast biche fillet used as little, agrémenté, hibiscus, hibiscus and cherry. Don't miss the net of pan-fried can.
