Chef Martin Vial and Laura Rulens have breathed new life into this magnificent restaurant housed in a 17th-century mansion clinging to the top of the ramparts. Martin, armed with serious experience in gastronomic cuisine, works resolutely with seasonal and local produce, revisiting classics with talent.
