Located in an elegant room of the Carnac hotel, chef Nils has raised the bar with his contemporary cuisine that plays on color, volume and texture, while respecting the seasons, using local produce and accommodating them with touches of cuisines from elsewhere. Cauliflower is adorned with Thai dokchok and ginger, haddock with mussels, fennel and lovage... From amuse-bouche to dessert (the delicious madeleines), everything is meticulously prepared, with a warm welcome from Sofie, the chef's wife.
