The passionate chef, Chevalier de la truffe noire du Périgord and a member of Auguste Escoffier's disciples, loves to work with fish and shellfish, and creates his menus according to the season. Example of a market menu: glass of champagne with a plate of amuse-bouches, sea bass with coriander and sweet bell pepper tabbouleh, lamb fillet with Meaux mustard and potato rösti, and raspberry and passion fruit mousse with yoghurt and mint for dessert.
