On the menu of this Michelin-starred restaurant, noble ingredients are combined with sweet and sour dishes, offering refined cuisine.
Maxime Kowalczyk is no stranger to the region. Trained by some of the world's greatest Michelin-starred chefs, this Burgundian chef and his wife Tiffany finally decided to settle in the center of Buxy. Thanks to the sincere, authentic cuisine he offers in a historic building, they quickly earned their first star. At the table, you'll find local produce of rare quality, which Maxime sublimates with sometimes bewildering but always masterful combinations, such as Bresse poultry with dandelion and cider.

On a rainy day, the restaurant's atmosphere is ominous and unsettling, with tables scattered around a vast and austere room where guests appear uneasy and avoid making eye contact. The waitstaff deliver a rehearsed spiel devoid of any warmth or personality, coming off as slightly subservient and patronizing. The food is presented in a pretentious manner, with a plethora of small dishes featuring obscure names and flavors that prove difficult to discern. At the end of the meal, the staff say their goodbyes with hollow words that lack any true sincerity or appreciation.
Ambiance feutrée
Service impeccable
