Formerly the Bistronome du Château, the restaurant at the Château de Couches has been renamed the Blason de Vair. The contemporary furnishings of the beautiful dining room blend with the magnificent Burgundian flagstones and French-style ceiling. In the kitchen, chef Jean-Philippe Marques makes it a point of honor to work exclusively with local, seasonal produce, without disdaining a few exotic touches.
