Hotel-restaurant in Digoin preparing seasonal dishes, homemade rillettes and their toast with grattons
Just outside Paray-le-Monial, this pretty Merle Blanc welcomes the many tourists visiting this prized corner of Burgundy. With 15 rooms on the hotel side and a capacity of around 110 covers on the restaurant side, it's hard to go unnoticed. The table is refined and the dishes are in tune with the seasons. Homemade rillettes, soup of the moment and grenadin of Charolais veal with bacon are just some of the dishes on offer, as are, much more surprisingly for the region, a sausage rougail and chicken tajine. A fine address.
