Renovated restaurant where you can taste mainly local products in Auxerre.
At the Maison Fort, run by Cyril Escrihuela (who cut his teeth at Alain Ducasse), you'll enjoy mainly local produce. And organic. The Maison Fort's credo? To promote short supply chains, and to rediscover the simplicity of the dishes of yesteryear. All in all, a limited choice, but plenty of flavour. Like the salted Profiterolles (with fresh cheese from La Pierre Qui Vire and lentil-mustard sauce), which we followed with lamb confit and sautéed potatoes. Finishing with an éclair au café revisited. Excellent.
