Taken over by Julien Cohen, the famous secondhand dealer on France 2's "Affaires conclues", the historic Hôtel de la Poste has been coming back to life since 2024. The restaurant, too, was one of France's first 3-star establishments back in 1933. Chef Reetesh Persand offers traditional and creative cuisine, with a few influences from elsewhere. On the Condé menu, for example, Ikejime yellowtail in dashi-infused tataki with Kalamansi pulp, seaweed and redcurrants, followed by a yellow pollack, before finishing with a blueberry brown Mont Blanc.
