The name of this restaurant, housed in a 13th-century crypt, is a nod to the Kimmeridgian: a subsoil rich in sediments and marine fossils, the source of the typicality of Chablis wines. And the rest? The cuisine focuses on fresh, local produce and creativity. On the terroir menu, we loved the eggs en meurette with pinot noir, the grilled andouillette from the very local Maison Colin with epoisses sauce, and the floating island with milk cream and apple juice. You'll also appreciate the lovely terrace lined with wisteria.
