Restaurant in a hyper design and soothing decoration offering a very high quality cuisine.

Creator of Le Soufflot in Irancy and Au Fil du Zinc in Chablis, Fabien Espana embarked on this new adventure at the end of 2020. Wine Not is a wine bar (with over 1,000 references from Chablis and around the world), a wine shop and a dining cellar. A tapas bar and a bar for barbecued or plancha-cooked meats. In a hyper-design and soothing decor, loyal customers will recognize some of the former Au Fil du Zinc team. In particular, in the kitchen, Tomoyuki Nishino and Manabu Sato. A guarantee of top quality! We love it.

At " Chablis Wine Not " it's possible ????

On termine son repas par une crème d'ange ????
D'abord on rebobine le déroulement du repas....
Un verre ou deux de Chablis 1er cru Vau de Vey de la rive gauche ou de Fourchaume de la rive droite...
Quelques tapas : kaarage (beignets de poulet), truite, toasts de veau ou terrine de lapin.
Pour accompagner un "Côtes d'Auxerre" Rouge "Ma Pierre" de Clément Lavallée, vigneron de Saint Bris ????
Une caillette de porc (une crépinette belge), un Chuck flap (un persillé de bœuf) accompagnés de pommes de terre sautées.
Un gâteau au chocolat ou la fameuse crème d'ange...
Et puis on se dit qu'il y a d'autres tapas ou de plats à déguster, d'autres bouteilles à déboucher....
Et on vérifie dans son agenda, une autre date pour vivre l'au-delà ????
