L'Obédiencerie, a beautiful 15th century building listed as a Historic Monument, hides a superb 9th century crypt. At the time, a monastery occupied the premises, and it was here that the first Chablis wines were born. Today, the crypt houses the cellars where the first and grand cru Chablis wines of Domaine Laroche are matured. A magnificent 13th-century slaughter press sits enthroned there in majesty. It can be visited by appointment. And it is always with a wine tasting that one will complete this beautiful discovery.
