Founded in 1980 by the late Michelin-starred chef Daniel Raymond, this family-run business has an established reputation for supplying caterers and restaurateurs throughout France. Even to the Elysée Palace, recently! The key to its success? Its salmon, processed weekly on the premises. Its foie gras and tasty toastines too. And don't hesitate to try the scallops and lobster. Pure delight! What's more, food trucks await you at local markets, including the one in downtown Auxerre on Wednesday mornings.

Encore, vite....
However, as for the dishes, we were disappointed as much by quality as by the quantity.
Bland taste of tart with morels and sweetbreads, fish overcooked and tasteless and the leeks fondue. 2 dry chips of polenta which are lost in the dish ..... and all this for more from €22 per person 2 dishes...

We will continue to buy salmon but for the rest, we will stay away.
