Fresh, local produce is the credo of this restaurant run by Nicolas Brelaud, who also manages the hotel. On the Découverte menu, we enjoyed poached organic eggs à la Chablisienne, with mushrooms, glazed onions, snacked bacon and croutons. This was followed by a Venetian-style veal liver and garlic potato cake. Before concluding with a crispy millefeuille with dark chocolate ganache, white chocolate mousse and milk chocolate crème anglaise. Excellent! Very tasty. Catering service is also available.
