CAVES BAILLY-LAPIERRE
Caves Bailly-Lapierre in the heart of a limestone deposit in Saint-Bris-le-Vineux, receiving visitors with disabilities.
To pass by the cellars of Bailly without discovering them would be a mistake! Because these underground cellars of 4 ha, located in quarries exploited since the 12th century, will leave you memories for a long time. Dug in the heart of a gigantic deposit of limestone some 170 million years old, they will indeed allow you to understand the vinification of Crémant de Bourgogne of which the Bailly-Lapierre cellars are the cradle. And for good reason: they were built just 50 years ago, in 1972, to allow the first vintage of this appellation born 3 years later. Before your guided tour, you can go for a walk in the vineyards (Tuesday to Saturday at 10am, by reservation). And to conclude nicely, a tasting of two glasses of crémant will be offered to you in order to put into practice what you have just learned (with a souvenir flute offered).
But, of course, you don't have to visit the place to discover the famous house production. People often come here for a simple tasting with friends. So, don't hesitate, because a festival of discoveries of regional grape varieties awaits you. And why not leave with a few copies of these excellent wines in your trunk, just to prolong the pleasure?
A word of advice: when visiting or just tasting in these cellars, don't forget to get lost in the surrounding countryside. The landscapes are superb, whatever the season. And the surrounding villages are typical and magnificent!

Visite commentée très intéressante, ambiance mystérieuse, puis dégustation des vins (Crémants de Bourgogne bien sûr mais également des vins tranquilles blancs et rouges de l' Yonne : Côtes d' Auxerre, Irancy, Saint-Bris...).
Je gage que vous ne serez pas déçu de ce voyage dans l'antre du Crémant bourguignon.
Le rapport qualité/prix est intéressant. La route pour parvenir à Bailly est très agréable en été, en longeant l'Yonne.
