Since 2017, Jean-Raphaël Persano's La Table du Martin Bel Air has been causing a stir on the Senon culinary scene. A plunge into the heart of the neo-bistro trend, with bold, inventive dishes created by the man who worked at Côte St Jacques, Richebourg in Vosne-Romanée, and Hostellerie St Vincent in Nuits-St-Georges. Starters included Burgundy snails marinated in Chablis, parsley coulis, sweet garlic cream and Epoisses emulsion. Then Normandy scallops with yuzu butter. A true delight!
