Based in Chemilly-sur-Yonne, near Auxerre, Borvo's reputation goes far beyond the Yonne department. Created in 1980 by the starred chef Daniel Raymond, the company supplies caterers and restaurant owners throughout France. Its strong point? Salmon from Scotland or Norway processed on site, as well as an excellent catering department. New: the Borvo is now also a tempting food-truck stationed at the Sens market on Mondays and Fridays, as well as at the Chablis market on Sundays, and at the Auxerre farmers' market on Wednesdays. We love it!
