Coming from a family of farmers, the agricultural engineer Yann Boissenet started working in the vineyard only a dozen years ago. Since then, more than anyone else, he loves to introduce the wines of the Aillantais, a territory that includes 4 winegrowers and some 25 hectares of vines. This is where the grey burgundy, typical of the region and with an onion skin colour, is produced. In addition to this, the winegrower produces a dozen or so cuvées, including a white burgundy chardonnay, a red pinot noir, ratafias and crémants de Bourgogne.
