Chef Yann Tournier combines seafood directly from Brittany with products from the Sancerre region to create four- to six-course menus that are as refreshing as they are innovative. Quality is a primary concern for Justine Heuzé (the manager and sommelier) and Yann Tournier, which is why they have chosen to work with local market gardeners, fish exclusively from sustainable fishing and hand-picked shellfish and seaweed. The wines have been carefully selected to match the menus.
