Fabienne and Guillaume Simoëns took over Jean-Guy Boissavie's butcher's shop and delicatessen. Guillaume Simoëns worked at Maison Mazières in Périgueux. The couple has carried out some renovation and upgrading work and continues in a spirit of quality, with a professional team. The meat is mainly of local origin, from the blonde d'Aquitaine de Saint-Astier. Guillaume works the old-fashioned way, without colouring and preservatives: natural. He makes homemade sausages, pâtés and andouillettes, and a very popular Périgueux pâté with a crust. The company has also launched a range of canned food and offers a catering service at home
