Winter sees the return of the Tuber Melanosporum (Périgord black truffle). The truffle market is supervised by the Groupement des Trufficulteurs du Périgord. Each truffle is inspected before being sold. Each truffle is carefully inspected and then "canifed" to verify its condition and quality.
