LES CELLIERS D’AUSSOU
Created in 1935, the Les Celliers de l'Aussou cooperative works on the vineyards located beside the Fontfroide, a few kilometers only from Narbonne, and in the middle of the scrubland. The special feature of the wines of the estate is that they are made from selected plots and harvested by hand. With 50% of black carignan, 35% of black grenache and 15% of syrah, you will enjoy the tasting of the red AOC Corbières Chefdebien. After its vinification in carbonic maceration, the wine is aged for 10 months in oak barrels. It goes well, for example, with cassoulet, the Aude traditional dish, but can also be kept for a few years depending on your patience. The special feature of Les Celliers de l'Aussou lies in the union of the vine and fruit: your table will be full of conviviality with the "innovative wines" which are the aromatised wines such as red-raspberry, white-nectarine and rosé-grapefruit.
