Manja e calha («eat and shut up» in Occitan) is the name given to the delicious artisanal jams prepared by Frédéric Malet in his workshop. The Manja e calha jams are made out of fruits produced from local productions and are available in some fifteen original flavours: cherry-Granny apple, lentils-apple-vanilla, caramel-chocolate, peach-lavender, melon-basilic, garrigue confit (thyme and rosemary infusion)… Some jams are even labelled Sud de France! You have understood it: Frédéric Malet successfully blends flavours in an unimaginable way in a single recipe, but he won his bet by pleasing the most difficult gourmet. The Occitan Jams are on sale throughout the department of Aude, including Carcassonne at the delicatessen Chez Julien, or at Fromagerie Bosquet because they blend beautifully with good cheeses.
