Open in summer, you can buy their oysters, clams, meadows, and mussels to take away or eat on-site (see restaurant section). Cul d'Oursin, aka Christophe Guinot, is a lover of his profession; do not hesitate to ask him, he will be happy to explain to you the techniques he uses to make his oysters so beautiful and fleshy. A charismatic oyster farmer who loves beautiful stories, he does not hesitate to scent the water in his rosemary parks picked in the nearby garrigue or to open a few bottles of champagne on his oysters... we love it!
