At the beginning of October, Fabrice won the gold medal at the 2018 regional paupiette competition, which was held in Angers. For the occasion, this delicatessen butcher created a roulade: the Basque roulade, made up of dried tomatoes, Bayonne dry ham and Espelette pepper stuffing; roulade that can now be found in stores. In addition to this speciality, the Lucerne butcher's shop also offers, in winter, raw meat specialities, such as roasted veal (Norman, Basque, Italian Orloff). In summer, make way for mixed skewers, chicken toad, sausages, merguez and homemade pudding, as well as mixed grilled and other grilled dishes, including the chef's grill.
