The truffle has long been a mystery as to its nature and origin. Today, we know it's a mushroom, a subterranean cousin of the morel. There are around ten varieties of truffle in Europe. With sales outlets in Biarritz, Bayonne, Anglet, Bordeaux, Dax and Paris, Maison Balme is a benchmark for truffles, but it's first and foremost a story of 4 generations of truffle-growing families.
