Mathieu Dupuy Baumal, the Michelin-starred chef who moved to this superb Provencal bastide in Aix in 2019, is consolidating his art. His cuisine is daring, atypical some would say, technical, modern, in keeping with his assertive personality. Flavors merge, inspired by his travels. The plate, the wines and the setting do the rest. A wine estate, Château de la Gaude also houses a 5-star hotel, three other restaurants, a boutique cellar and a wine bar.
