Les choux de M. Chou have been our darlings since 2015, when Loïc Derbay created this concept in Aix, and then Marseille. In the windows, sweet and savory choux are pampered, ensconced in their pleated collars. The fillings follow the seasons. Yes to the calisson, tropézienne or lavender cabbage as ambassadors of Provence, yes to the others, strawberry Mara des bois, pineapple or lemon meringue cabbage, yes to saint Honoré. As pièces montées and logs at Christmas. Loïc also makes savory choux, meringues and fluffy cakes. You can enjoy them on the spot in the tearoom, or at lunchtime with a savory cabbage, a salad and a sweet cabbage. Loïc shares his know-how at a monthly workshop.
