Talented, creative and a gifted pastry chef, Alsace-born Florian Grad apprenticed with Emile Jung, the Michelin-starred chef at Le Crocodile in Strasbourg. Then it was in the South, notably at the Villa Madie in Cassis, that Florian perfected his technique. Victoire marks a new departure in 2021, a 4-hands job with Inès, his pastry companion, who brings her personal touch to the creations, with a common demand for quality ingredients and a reasoned quantity of fats and sweets. Signature and ephemeral cakes, revisited classics, seasonal entremets and viennoiseries are unanimously acclaimed beyond the village of Puyricard. Victoire lives up to its name.
