The small village of Maillane is not only known as the home of Mistral, but also as the home of a very fine restaurant: the Oustalet maianen. This institution has been taken over by Thomas, who was kitchen manager and succeeded Christian Garino. The DNA is the same, with products sourced from local producers in Maillane for divine Provencal and Mediterranean cuisine that's refined, fresh and original. The signature dish: confit bull fillet and tail with reduced jus and seasonal garnish; a sure bet.

O mais caro (calendal) tem 5 itens e o mais barato (signature) tem 3 itens (entrada, prato principal e sobremesa ou queijos). No menu signature existem 2 opções de entrada, 2 de prato principal e 2 de sobremesa, sendo que você pode optar por queijos no lugar da sobremesa.
A escolha pelo menu mais caro tem de ser feita para a mesa toda.
Comemos o menu signature e comida definitivamente não me agradou, mas acho que é essencialmente uma questão de eu não estar acostumado com pratos refinados, com uma culinária francesa de alto nível.
Servem pão, muito bom por sinal.
Também servem no começo abre-apetite com azeitonas pretas, umas torradinhas muito boas e uma outra coisinha muito boa também.
