The pulp is the most important part of the grape, and Mathilde knows all about it, coming as she does from a family of winegrowers (Château Saint-Esprit estate). Since last year, she has been running this epicurean establishment with an innovative concept: a fine cellar (over 100 references of organic, biodynamic and natural wines) and chefs in residence, for an ever-renewed gourmet menu: tasty small dishes at lunchtime and plates to share in the evening.
