If his parents cultivated mainly hay, Stéphane Trouin has bet on the olive tree. Thus, he planted 1,400 olive trees in 2001; there are currently 2,600. His young trees of local varieties (mostly bouteillan, aglandau, picholine, cayon and cayet roux), which are not treated but are irrigated, are beginning to produce enough: two years ago, he harvested 9 tons of olives, which he has crushed at the Gervasoni mill in Aups. His organic olive oil (assemblage) is fruité vert.
