André Lanza embarked on olive cultivation about ten years ago. First, by renting a parcel of olive trees of years, and then planting trees itself. At present, its «herd» is 1 500 olive trees, from cayon varieties, ribier, picholine, red cayet and aglandau, plus a North African variety, sigoise. He tweak the olives in his mill mill and carries out each year, depending on the harvest, two oils in fruity or ripe green. Sometimes monovariétales (especially picholine) and often assemblages (aglandau and bouteillan).
