After a period of transition, with the arrival, in May 2021, of a chef already starred in Corsica, Alexandre Fabris, the restaurant of the Château de Valmer has found its way back to gastronomy. This native of Burgundy has quickly acclimated to the products and cuisine of the South. His work is precise, highlighted by very original dressings. He magnifies the local seasonal products and of course, draws from the manna of the organic vegetable garden, which is the pride of the domain, to elaborate a part of his recipes. The desserts, all in delicacy, are of high quality.
