COOPÉRATIVE OLÉICOLE DU CANTON D'OLLIOULES
The story of the mill of Ollioules is closely linked to that of the olive tree: letters of patent dated 1247 allowed the lords of Ollioules to "have one or more olive mills built so that the inhabitants can pressed their olives". The municipality even counted up to twelve oil mills, the largest in Europe. But after the 1956 freeze, we have to wait until 1991 for the co-operative to re-monopolise olives again. It has been expanding since then, with 500 co-operators and during the 2010/2011 harvest, more than 206 tonnes of olives were pressed at the mill or more than 30 000 litres produced. The oils come from an assemblage of local varieties (brown, cayon, lucca, bouteillan and picholine) in fruity green or fruity. You will find them to the cooperative, but attention, of the 30 000 litres produced, only 3 000 litres are put to sale by the cooperative.
