CHÂTEAU DE PAMPELONNE
The Domaine de Pampelonne, owned by the Pascaud family of Gasquet, is located on the peninsula of Saint-Tropez along the beaches of Pampelonne. On a surface of 50 hectares, the sandy soils of 80%, allies with great maritime influence, promote the concentration of grapes at the time of maturation. The wide variety of varieties present are very suitable for Mediterranean climatic conditions. The harvest is, for half, made to the machine and the other half by hand, very early in the morning, in order to harvest the grapes as fresh as possible and encourage the extraction of primary aromas. The development of rosé is done according to two techniques, bleeding or short maceration (about 2 hours), followed by direct pressing.
