After a career in prestigious establishments, Julien Ragusa, a former chef, set up as a cheese ripener. His cheese-making and hard work were quickly recognized by the Académie Culinaire de France. His singular cheese platters and boxes seduce with their originality and playfulness, and allow you to discover, among a selection of 200 cheeses mostly made from raw milk and produced in the purest tradition, the homemade truffled bouton de culotte, or Clacbitou, a goat's cheese with a light hazelnut taste.
