This house, founded by Baptistin Fouque in 1864, always manufactures the nougat (and what nougat !), according to artisan and traditional methods of which it alone has the secret. This Provençal candy, made by hand in centenaires cauldrons, is made only for year-end celebrations. The white and black nougats, which are required on the table calendale in place of honour among the thirteen desserts, are on sale at the shop. The factory visit (until mid-November) is automatically followed by a tasting.
